A day late and a dollar short is the saying. Yesterday was a rather chaotic day for me an Tasty Tuesday slipped through the cracks. Luckily, no one probably cares that today is Wednesday, any day is a good day to share a delicious recipe. 🙂
I was looking for a somewhat healthy cookie and I came across these which are kind of like energy cookies. Super yummy. Unfortunately, I wrote this recipe in my notebook and forgot to write my source so I haven’t the slightest idea which site I borrowed this recipe from. Sorry. :<
Peanut Butter Chocolate chip Oatmeal Cookies
- 1 cup creamy peanut butter
- 2 eggs
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 2/3 cups quick cooking oats
- 1 tsp baking soda
- 2/3 coups chocolate chips
Preheat oven to 350 degrees.
In a medium bowl mix together the oats and baking soda. In a large bowl combine peanut butter, eggs, sugar and vanilla. Mix with a wooden spoon until uniform and creamy looking, about 2-3 minutes. Dump in the oat mixture and combine. Then add chocolate chips.
Drop cookie dough on a cooking sheet and bake 9-11 minutes. Take out when edges are light brown. I did one inch cookies and was able to get 2 dozen cookies from this recipe.
